A creamy and comforting mushroom risotto inspired by Gordon Ramsay, made with arborio rice slowly cooked in flavorful broth with sautéed mushrooms, garlic, and parmesan cheese. This classic dish delivers a silky texture and rich earthy flavor perfect for both casual meals and elegant dinners.

Ingredients

  • 1½ cups arborio rice
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • ½ cup dry white wine
  • 4 cups warm chicken or vegetable broth
  • ½ cup grated parmesan cheese
  • 1 tablespoon fresh thyme or parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Extra parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil and 1 tablespoon of butter in a large pan over medium heat.
  2. Add the chopped onion and cook for several minutes until soft and fragrant.
  3. Stir in the minced garlic and sliced mushrooms and cook until the mushrooms release their moisture and begin to brown.
  4. Add the arborio rice and stir for about 1 minute to lightly toast the grains.
  5. Pour in the white wine and stir until most of the liquid evaporates.
  6. Add the warm broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
  7. Continue adding broth and stirring for about 18–20 minutes until the rice becomes tender but still slightly firm in the center.
  8. Stir in the remaining butter and grated parmesan cheese to create a creamy texture.
  9. Season with salt and black pepper and garnish with fresh thyme or parsley.
  10. Serve immediately with additional parmesan cheese if desired.

  • Use a mixture of mushrooms such as cremini, shiitake, or portobello for deeper flavor.
  • Fresh spinach can be stirred in during the final minutes of cooking.
  • Roasted garlic adds additional richness.
  • A small drizzle of truffle oil enhances the earthy mushroom flavor.
  • Store leftover risotto in an airtight container in the refrigerator for up to 3 days.
