These Gooey Monster Cookies are soft, chewy, and colorful cake mix cookies topped with candy eyeballs. Perfect for Halloween parties, kid-friendly baking, or anytime you want a fun and festive treat.

Ingredients

  • 1 box cake mix (vanilla or white recommended for coloring)
  • 1/2 cup butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Food coloring (green, orange, purple, blue, or assorted)
  • Powdered sugar (for rolling)
  • Candy eyeballs (various sizes)

Instructions

  1. In a large bowl, beat butter, cream cheese, egg, and vanilla until fluffy.
  2. Mix in dry cake mix until dough forms.
  3. Divide dough into bowls; tint each with food coloring. Mix until vibrant.
  4. Cover and chill dough at least 30 minutes.
  5. Preheat oven to 350°F. Line baking sheet with parchment.
  6. Roll dough into 1-inch balls, coat in powdered sugar, and place on baking sheet.
  7. Gently flatten each dough ball. Bake 10–12 minutes until set but still soft.
  8. While warm, press candy eyeballs into tops.
  9. Cool completely before serving.
