Golden sweet onion tart with Gruyère and herbs is a savory, elegant dish made with caramelized onions, melted cheese, and a flaky tart crust. It’s perfect for brunch, lunch, or a cozy dinner, combining rich flavor with minimal effort.

Ingredients

  • 23 large sweet onions (Vidalia or Walla Walla), thinly sliced
  • 1 tbsp olive oil or butter
  • 1 cup shredded Gruyère cheese
  • 2 large eggs
  • 3/4 cup heavy cream or half-and-half
  • 12 tsp fresh thyme or rosemary, chopped
  • Salt and pepper, to taste
  • 1 prepared tart crust or pie dough (homemade or store-bought)
  • 1 tsp Dijon mustard (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Fit tart dough into a tart pan, trim the edges, prick the base with a fork, and blind bake for 10–12 minutes.
  2. Meanwhile, heat olive oil or butter in a skillet over medium heat. Add sliced onions and cook for 20–25 minutes, stirring occasionally, until golden and caramelized. Season with salt, pepper, and herbs.
  3. In a bowl, whisk together eggs and cream. Add a pinch of salt and pepper.
  4. Optional: brush the pre-baked crust with Dijon mustard for added flavor.
  5. Spread caramelized onions evenly over the crust. Sprinkle Gruyère cheese on top, then pour the egg mixture over everything.
  6. Bake for 25–30 minutes or until the filling is set and the top is golden and slightly puffed.
  7. Let the tart cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

  • Use yellow onions if sweet onions aren’t available—add a pinch of sugar while cooking.
  • Leeks or sautéed mushrooms make great additions or substitutions.
  • Puff pastry can be used in place of traditional tart dough—adjust baking time accordingly.
  • Add a sprinkle of Parmesan or fresh herbs after baking for extra flavor.
  • To make ahead, bake fully and refrigerate. Reheat gently in the oven before serving.
