  • 2 large eggs
  • 1 cup shredded cheese (cheddar, Gruyère, or a mix)
  • 1/4 cup chopped fresh herbs (parsley, chives, thyme)
  • 2 garlic cloves, minced
  • 1/2 small onion, grated or finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or butter

Instructions

  2. Grate the potatoes and squeeze out excess moisture using a clean towel or cheesecloth.
  3. In a large bowl, combine shredded potatoes, eggs, cheese, herbs, garlic, onion, salt, and pepper. Mix well.
  4. Heat olive oil or butter in a large oven-safe skillet over medium heat.
  5. Spread the potato mixture evenly in the skillet and press down gently.
  6. Cook undisturbed for 8–10 minutes, until the bottom is golden and crisp.

  8. Let cool slightly before slicing into wedges and serving.
