Golden Cheese and Herb Potato Frika is a crispy skillet-fried potato dish loaded with melted cheese, fresh herbs, and savory garlic. It’s golden and crunchy on the outside, tender on the inside — perfect as a hearty side dish, vegetarian main, or brunch favorite. Ready in just 25 minutes and easy to customize with your favorite cheese and herbs.

Ingredients

  • 4 medium potatoes, peeled and grated (Yukon Gold or russet)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • 3 tablespoons chopped fresh herbs (parsley, chives, dill, or combination)
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste
  • 23 tablespoons oil (olive oil or neutral oil for frying)

Instructions

  1. Grate potatoes and squeeze out excess moisture using a clean towel.
  2. In a large bowl, mix grated potatoes with cheese, flour, eggs, herbs, garlic, salt, and pepper until well combined.
  3. Heat oil in a non-stick or cast-iron skillet over medium heat. Press the mixture into an even layer and cook undisturbed for 5–7 minutes until golden and crisp.
  4. Flip the frika using a large spatula (or cut and flip in sections). Cook the other side for 5–7 minutes until golden and fully cooked.
  5. Transfer to a cutting board, slice into wedges, and serve hot with sour cream, yogurt, or a fried egg on top.
