Ingredients

  • 3 large eggs
  • 1 tbsp honey
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1¼ cups milk (any variety)
  • ½ cup oat flour
  • ½ cup almond flour
  • Vegetable oil or spray, for greasing the pan
  • Optional toppings: sugar-free jam, fresh berries, drizzle of honey

Instructions

  1. In a medium bowl, whisk together eggs, honey, salt, and vanilla extract.
  2. Slowly add the milk, alternating with oat and almond flour, whisking until smooth.
  3. Heat a nonstick pan over medium heat and lightly coat with oil or spray.
  4. Pour a small ladle of batter into the pan, swirling to coat the bottom evenly.
  5. Cook until golden on the bottom, then flip and cook the other side until lightly golden.
  6. Repeat with remaining batter.
  7. Serve warm with jam, fresh berries, and a drizzle of honey.
