These Gingerbread Men cookies are a classic holiday treat with warm spices, rich molasses flavor, and a perfect balance between soft and crisp. Fun to bake and decorate, they make festive gifts or a delightful addition to any holiday cookie spread.

Ingredients

  • 3 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2/3 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • Royal icing or sugar icing (for decorating)
  • Assorted candies or sprinkles (optional)

Instructions

  1. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In a separate bowl, cream butter and brown sugar until light and fluffy.
  3. Mix in molasses, egg, and vanilla extract until smooth.
  4. Gradually add dry ingredients to the wet mixture to form a soft dough.
  5. Divide dough into two disks, wrap in plastic, and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out dough on a floured surface to 1/4 inch thick and cut into gingerbread men.
  8. Place on baking sheets and bake for 8–10 minutes, depending on desired texture.
  9. Let cool completely, then decorate with icing and candies.
