Ginger Beef & Broccoli Noodle Stir Fry is a quick, flavorful one-pan meal featuring tender beef, crisp broccoli, and noodles tossed in a savory ginger-soy sauce. Perfect for weeknights, it’s better than takeout and easily customizable.

Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 2 cups broccoli florets
  • 8 oz noodles (lo mein, rice noodles, or spaghetti)
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch
  • 1/4 cup water
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil
  • 2 green onions, sliced (for garnish)
  • Optional: red pepper flakes or chili paste to taste

Instructions

  1. Cook the noodles according to the package instructions, then drain and set aside.
  2. In a bowl, whisk together soy sauce, oyster sauce, brown sugar, cornstarch, and water to create the stir fry sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef slices and sear until browned. Remove and set aside.
  4. In the same pan, stir-fry broccoli until bright green and tender, adding a splash of water if needed to help steam.
  5. Add garlic and ginger to the pan and stir for about 30 seconds until fragrant.
  6. Return the beef to the pan, add the cooked noodles, and pour in the sauce. Toss everything together until evenly coated and heated through.
  7. Drizzle with sesame oil and garnish with green onions before serving.

Notes

  • Use tamari or coconut aminos for a gluten-free version.
  • Add bell peppers, snap peas, or carrots for extra veggies.
  • Try chicken or shrimp instead of beef for a protein variation.
  • To reheat, use a skillet with a splash of water or sauce for best texture.
  • Frozen broccoli works well if thawed and dried before use.
