Ingredients

  • 12 oz spaghetti (or other long pasta)
  • 1 lb raw shrimp, peeled and deveined
  • 3 tbsp olive oil, divided
  • 3 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved
  • ½ small red onion, thinly sliced
  • 1 small cucumber, diced
  • ½ cup feta cheese, crumbled
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)
  • 1 tsp shrimp seasoning blend or ½ tsp paprika + ½ tsp Italian seasoning

Instructions

  1. Cook spaghetti in salted boiling water until al dente; drain and set aside.
  2. Season shrimp with salt, pepper, and chosen spices.
  3. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear shrimp for 1–2 minutes per side until pink and opaque; remove from skillet.
  4. Add remaining olive oil to skillet, sauté garlic for 30 seconds.
  5. Stir in lemon juice, cherry tomatoes, olives, red onion, and cucumber; toss until just warmed.
  6. Return shrimp to skillet, add spaghetti, and toss to combine.
  7. Top with feta cheese, adjust seasoning, and serve immediately.

Notes

  • Add fresh herbs like parsley or basil for extra freshness.
  • Sprinkle red pepper flakes for heat.
  • Use whole wheat or gluten-free pasta for dietary needs.
  • Roasted red peppers add sweetness and color.
  • Swap shrimp for scallops or white fish for variety.
