Ingredients

  • For the Potatoes:
  • 45 small or medium-sized potatoes, cut into chunks
  • Olive oil (for tossing)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • For the Chicken:
  • 2 chicken breasts
  • 2 tablespoons butter, softened
  • 2 tablespoons minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • To Finish:
  • Grated parmesan cheese (for topping)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cut potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet.
  3. In a bowl, mix softened butter, minced garlic, paprika, onion powder, Italian seasoning, salt, and pepper.
  4. Coat chicken breasts with the garlic butter mixture and place on the baking sheet with potatoes.
  5. Bake for 25–30 minutes, until chicken reaches 165°F (74°C) and potatoes are golden and tender.
  6. Sprinkle grated parmesan over everything before serving.
