Garlic Mushroom Bok Choy Stir-Fry is a quick, healthy, and flavorful plant-based dish featuring tender bok choy, savory mushrooms, and a garlicky soy-based sauce. Perfect as a light main or veggie-packed side.

Ingredients

  • 45 baby bok choy, halved or quartered
  • 8 oz mushrooms (shiitake, cremini, or button), sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional)
  • 2 tbsp soy sauce or tamari (for gluten-free)
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil or neutral oil
  • 1 tbsp rice vinegar
  • 1/2 tsp sugar or maple syrup
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 tsp sesame seeds (for garnish)
  • Cooked rice or noodles, for serving (optional)

Instructions

  1. Wash and dry bok choy thoroughly. Slice lengthwise into halves or quarters.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add mushrooms and sauté for 4–5 minutes until browned and moisture is released.
  5. Add garlic (and ginger if using), stir for 30 seconds until fragrant.
  6. Add bok choy and stir-fry for 2–3 minutes until greens are wilted and stalks are crisp-tender.
  7. Pour in sauce and stir to coat. Cook for another minute to absorb flavors.
  8. Remove from heat and garnish with sesame seeds and red pepper flakes. Serve over rice or noodles if desired.

Notes

  • Add tofu or tempeh for more protein.
  • Other veggies like snap peas, bell peppers, or shredded carrots can be added.
  • A drizzle of hoisin or oyster sauce adds extra depth.
  • Reheat leftovers gently in a skillet to maintain texture.
  • Use full-size bok choy if needed, chopped into bite-size pieces.
