Garlic Cauliflower Mushroom Skillet is a savory, one-pan vegetable dish featuring golden cauliflower florets and earthy mushrooms sautéed with garlic, herbs, and a splash of lemon. It’s hearty, healthy, and comes together in under 30 minutes.

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 8 oz mushrooms (cremini or button), sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or rosemary (or 1 tsp fresh)
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add cauliflower florets and cook for 5–7 minutes, stirring occasionally, until they begin to brown and soften.
  3. Add sliced mushrooms and continue cooking for 5–6 minutes until browned and most moisture evaporates.
  4. Stir in garlic, thyme or rosemary, salt, pepper, and red pepper flakes. Cook for 1–2 more minutes until fragrant.
  5. Finish with a splash of lemon juice and toss to combine.
  6. Garnish with fresh parsley and serve warm.

Notes

  • Don’t overcrowd the skillet—cook in batches if needed for better browning.
  • Add spinach or kale during the last minute of cooking for extra greens.
  • Chickpeas or white beans can be added for more protein.
  • For added richness, stir in a splash of cream or plant-based milk at the end.
  • Nutritional yeast or Parmesan makes a great topping.
