Garlic Butter Steak Bites and Potatoes

Tender, juicy steak bites seared to perfection and paired with crispy golden potatoes, all tossed in rich, flavorful garlic butter for a hearty one-pan meal.

Ingredients

  • 1 1/2 pounds sirloin steak, cut into bite-sized pieces
  • 1 1/2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat and add 2 tablespoons of olive oil.
  2. Add the halved potatoes, season with salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until golden and fork-tender. Remove from the skillet and set aside.
  3. Add the remaining olive oil to the same skillet and increase the heat to medium-high.
  4. Place the steak bites in a single layer, season with salt, pepper, and dried thyme, and sear for 2–3 minutes per side until browned and cooked to your preferred doneness.
  5. Reduce the heat to medium and add butter and minced garlic to the skillet. Stir and cook for about 1 minute until fragrant.
  6. Return the potatoes to the skillet and toss everything together in the garlic butter until evenly coated.
  7. Sprinkle chopped fresh parsley over the top and serve immediately.

Notes

  • Do not overcrowd the pan when searing steak to ensure proper browning.
  • Cut potatoes into even-sized pieces for consistent cooking.
  • Ribeye or strip steak can be used for a richer flavor.
  • Add vegetables like green beans, asparagus, or mushrooms for variety.
  • Reheat gently to avoid overcooking the steak.
