Ingredients

  • For the chicken:
  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • For the parmesan cream sauce:
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup freshly grated parmesan cheese
  • Salt & pepper, to taste
  • For the cheesy roasted potatoes:
  • 1 ½ lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & black pepper, to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread evenly and roast for 20–25 minutes until golden.
  3. Sprinkle cheddar cheese over potatoes and return to oven for 5 minutes until melted.
  4. While potatoes roast, season chicken with paprika, Italian seasoning, salt, and pepper.
  5. Heat butter and olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through. Remove and set aside.
  6. In the same skillet, melt butter and sauté garlic until fragrant.
  7. Add chicken broth and heavy cream, simmering gently.
  8. Stir in parmesan until sauce is smooth and creamy. Adjust seasoning.
  9. Return chicken to skillet and toss in sauce until coated.
  10. Serve chicken with cheesy potatoes, garnished with parsley.
