Ingredients

  • 23 blood oranges, peeled and sliced into rounds or segments
  • 2 ripe avocados, sliced or cubed
  • 4 cups mixed greens or arugula
  • 1/4 red onion, thinly sliced
  • 1/4 cup toasted almonds, pistachios, or walnuts
  • Optional: 1/4 cup crumbled feta or goat cheese
  • Optional: fresh mint or basil leaves
  • For the citrus dressing:
  • 1/4 cup fresh blood orange juice (or mix with lemon juice)
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together blood orange juice, olive oil, Dijon mustard, honey (or maple syrup), salt, and pepper until well combined.
