French Carrot Salad with Honey Dijon Dressing is a light, crisp, and tangy side dish made with shredded carrots and a simple vinaigrette. It’s perfect for picnics, elegant gatherings, or weeknight meals and ready in just 10 minutes.

Ingredients

  • 45 medium carrots, peeled and grated
  • 1 tbsp Dijon mustard
  • 1 tbsp honey (or maple syrup for vegan option)
  • 2 tbsp lemon juice (or white wine vinegar)
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley or chives, chopped (optional)

Instructions

  1. Peel and grate carrots finely (using a box grater or food processor).
  2. In a small bowl, whisk together Dijon mustard, honey, lemon juice, olive oil, salt, and pepper until emulsified.
  3. Place grated carrots in a large bowl.
  4. Pour dressing over the carrots and toss to coat evenly.
  5. Let sit for 5–10 minutes before serving to allow flavors to meld.
  6. Garnish with fresh parsley or chives if desired.

Notes

  • Add raisins, chopped dried apricots, or slivered almonds for extra texture.
  • Swap lemon juice for apple cider vinegar for a fruitier tang.
  • Use whole grain mustard instead of Dijon for a rustic twist.
  • Store in the fridge for up to 3 days — flavor improves over time.
  • Great served cold with grilled meats, sandwiches, or grain bowls.
