Bold and spicy buffalo sweet potato tacos with fresh, vibrant toppings, offering a perfect balance of heat, sweetness, and creamy texture in every bite.

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/3 cup buffalo sauce
  • 8 small tortillas
  • 1 cup shredded lettuce or cabbage
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream
  • 1 tablespoon lemon or lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the cubed sweet potatoes with olive oil, salt, black pepper, garlic powder, and smoked paprika.
  3. Spread them evenly on a baking sheet.
  4. Roast for 20–25 minutes until tender and slightly crispy on the edges.
  5. Remove from the oven and toss the sweet potatoes in buffalo sauce until well coated.
  6. In a small bowl, mix Greek yogurt or sour cream with lemon or lime juice, minced garlic, salt, and black pepper to make the sauce.
  7. Warm the tortillas in a pan or microwave.
  8. Assemble the tacos by adding buffalo sweet potatoes to each tortilla.
  9. Top with lettuce or cabbage, avocado slices, cherry tomatoes, red onion, and cilantro.
  10. Drizzle with the prepared sauce and serve immediately.
