Elvis Presley Cake is a moist yellow cake soaked with crushed pineapple and topped with a rich cream cheese frosting. It’s a nostalgic, crowd-pleasing dessert full of fruity sweetness and creamy goodness.

Ingredients

  • 1 box yellow cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 can crushed pineapple with juice (20 oz)
  • 1/2 cup granulated sugar
  • 1 package cream cheese, softened (8 oz)
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional, for topping)

Instructions

  1. Preheat oven according to yellow cake mix instructions and lightly grease a 9×13-inch baking dish.
  2. Prepare the yellow cake mix using eggs, oil, and water as directed. Pour batter into the baking dish and bake as directed, about 30 minutes, or until golden and a toothpick comes out clean.
  3. While the cake is still warm, poke holes all over the top using a fork or skewer.
  4. Pour the crushed pineapple with juice evenly over the cake and sprinkle with granulated sugar. Allow to cool completely.
  5. In a mixing bowl, beat together cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
  6. Spread the frosting evenly over the cooled cake.
  7. Sprinkle chopped nuts over the top, if using.
  8. Chill the cake for at least 1 hour before serving.
