A savory breakfast pizza topped with melted mozzarella, fresh tomatoes, and perfectly baked eggs on a crispy crust, finished with fresh herbs for a warm and satisfying brunch dish.

Ingredients

  • 1 lb pizza dough
  • 4 large eggs
  • 2 medium tomatoes, sliced
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C) and lightly grease a baking sheet or pizza pan.
  2. Roll out the pizza dough into a round or rectangular shape and place it on the prepared pan.
  3. Brush the dough lightly with olive oil and sprinkle the minced garlic over the surface.
  4. Spread the shredded mozzarella cheese evenly across the dough.
  5. Arrange the sliced tomatoes on top of the cheese and season with salt and black pepper.
  6. Carefully crack the eggs onto the pizza, spacing them evenly.
  7. Bake for 12–15 minutes until the crust is golden, the cheese is melted, and the egg whites are set.
  8. Remove from the oven and sprinkle with fresh basil or parsley.
  9. Slice and serve warm.

Notes

  • Store-bought pizza dough works well and saves time.
  • Keep an eye on the pizza so the egg yolks remain slightly soft.
  • Cooked bacon, sausage, or ham can be added for extra protein.
  • Vegetables like spinach, mushrooms, or bell peppers make great additions.
  • A mix of cheeses such as cheddar, parmesan, or feta adds extra flavor.
  • Store leftovers in the refrigerator for up to 3 days.
