This easy taco rice bowl is a quick, customizable, and flavorful meal featuring seasoned ground beef, rice, beans, and all your favorite taco toppings. Perfect for busy weeknights or meal prep.

Ingredients

  • 1 lb ground beef (or ground turkey or chicken)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 2 cups cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup salsa or pico de gallo
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1 sliced avocado or 1/2 cup guacamole
  • Fresh cilantro, optional
  • Lime wedges, optional

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  2. Stir in taco seasoning and 1/4 cup water. Simmer for 2–3 minutes until thickened.
  3. While the beef cooks, heat the rice and prepare your toppings.
  4. To assemble, start with a layer of rice in each bowl.
  5. Add taco meat, black beans, corn, and cheese.
  6. Top with salsa, sour cream, lettuce, tomatoes, avocado or guacamole.
  7. Garnish with lime juice and fresh cilantro, if using. Serve immediately.

Notes

  • Swap in cauliflower rice for a low-carb option.
  • Use shredded chicken or tofu for a different protein.
