This Easy Swiss Mushroom Melt is a warm, savory sandwich made with tender sautéed mushrooms, sweet onions, melted Swiss cheese, and crisp golden bread. It’s a quick, comforting meal that feels café-worthy but comes together easily at home.

Ingredients

  • 2 cups sliced mushrooms
  • 4 slices Swiss cheese
  • 4 slices bread (such as sourdough or rye)
  • 2 tablespoons butter, softened
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil and 1 tablespoon of butter in a skillet over medium heat.
  2. Add the sliced onions and cook until soft and lightly golden, about 4–5 minutes.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the sliced mushrooms, season with salt and black pepper, and cook until they release their moisture and become tender and browned, about 6–8 minutes. Allow the mixture to cook down so the flavors concentrate.
  5. Remove the mushroom mixture from the pan and set aside.
  6. Spread the remaining butter evenly on one side of each slice of bread.
  7. Place one slice of bread, buttered side down, into a skillet over medium-low heat.
  8. Layer one slice of Swiss cheese on the bread, add a generous portion of the mushroom mixture, then top with another slice of Swiss cheese.
  9. Place the second slice of bread on top, buttered side up.
  10. Cook until the bottom is golden brown and crisp, about 3–4 minutes. Carefully flip and cook the other side until golden and the cheese is fully melted.
  11. Remove from the pan, let rest for 1 minute, then slice and serve warm.

Notes

  • For deeper flavor, cook the onions longer to caramelize them before adding the garlic.
  • Gruyère or provolone can be added or substituted for a sharper taste.
  • The mushroom mixture can be prepared up to 3 days in advance and stored in the refrigerator.
  • Reheat leftovers in a skillet or 350°F oven to maintain crispness.
