A cozy and hearty shepherd’s pie casserole made with a savory ground beef filling, mixed vegetables, and creamy mashed potatoes, all baked together for an easy family-friendly comfort meal.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 3 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and diced onion and cook until the beef is browned.
  3. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Stir in tomato paste, Worcestershire sauce, beef broth, salt, black pepper, and paprika. Simmer for 5–7 minutes until slightly thickened.
  5. Spread the beef mixture evenly into a greased baking dish.
  6. Layer the frozen mixed vegetables evenly over the meat.
  7. Gently spread the mashed potatoes over the vegetables, smoothing the top.
  8. Sprinkle shredded cheddar cheese evenly on top.
  9. Bake for 30 minutes, or until heated through and lightly golden on top.

Notes

  • You can substitute ground turkey or lamb for the beef.
  • For extra flavor, mix butter or garlic into the mashed potatoes.
  • Cover loosely with foil if the top browns too quickly.
  • Great for meal prep and leftovers.
