A cozy, no-fuss casserole made with tender rotisserie chicken, savory boxed stuffing, and a creamy, buttery sauce—perfect for an easy comfort-food dinner any night of the week.

Ingredients

  • 3 cups cooked rotisserie chicken, shredded
  • 1 box (6 oz) stuffing mix (any flavor)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth or water
  • 1/2 cup butter, melted
  • 1 cup frozen peas or green beans (optional)
  • 1/2 teaspoon dried thyme or sage (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together cream of chicken soup, sour cream, and chicken broth until smooth.
  3. Fold in shredded rotisserie chicken and optional frozen vegetables.
  4. Spread the chicken mixture evenly in the prepared baking dish.
  5. In a separate bowl, combine stuffing mix with melted butter and enough hot water or broth to moisten.
  6. Spoon the stuffing mixture evenly over the chicken layer.
  7. Bake uncovered for 30–35 minutes, until hot, bubbly, and golden on top.
  8. Let rest for a few minutes before serving.
