A comforting low carb pizza casserole made with seasoned ground meat, marinara sauce, vegetables, and melted cheese for all the classic pizza flavors without the crust.

Ingredients

  • 1 lb ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 cup low carb marinara sauce
  • 1/2 cup bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup pepperoni slices

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a casserole dish.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chopped onion and cook for about 3–4 minutes until softened.
  4. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Add the ground beef or ground turkey and cook until browned, breaking it apart as it cooks.
  6. Drain excess grease if necessary.
  7. Stir in the diced bell pepper, sliced mushrooms, marinara sauce, Italian seasoning, salt, and black pepper.
  8. Let the mixture simmer for about 5 minutes so the flavors combine.
  9. Transfer the mixture to the prepared casserole dish and spread it evenly.
  10. Sprinkle the shredded mozzarella and grated parmesan cheese over the top.
  11. Arrange the pepperoni slices evenly across the cheese.
  12. Bake for 25–30 minutes until the cheese is melted, bubbly, and lightly golden.
  13. Allow the casserole to cool for a few minutes before serving.

  • Use a low carb marinara sauce with no added sugar to keep the recipe low in carbohydrates.
  • Ground chicken or sausage can replace ground beef for a different flavor.
