A warm, comforting cobbler made with juicy peaches and tart raspberries baked under a soft, golden biscuit-style topping—easy to make with fresh or frozen fruit.

Ingredients

  • 4 cups sliced peaches (fresh or frozen)
  • 1 1/2 cups raspberries (fresh or frozen)
  • 3/4 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon or 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, toss peaches and raspberries with 1/4 cup sugar and lemon juice.
  3. Pour the fruit mixture evenly into the prepared baking dish.
  4. In another bowl, whisk together flour, remaining sugar, baking powder, salt, and optional cinnamon.
  5. Stir in melted butter and milk until a thick batter forms.
  6. Drop spoonfuls of batter over the fruit, gently spreading but leaving some fruit exposed.
  7. Bake for 35–40 minutes, until the topping is golden and the fruit is bubbling.
  8. Cool slightly and serve warm.

Notes

  • No need to thaw frozen fruit before baking.
  • Sprinkle coarse sugar on top before baking for extra crunch.
  • Serve with vanilla ice cream or whipped cream.
