This Easy Overnight French Toast Casserole is a cozy, make-ahead breakfast that’s golden on top, custardy underneath, and full of warm cinnamon-vanilla flavor. Perfect for holidays, brunches, or stress-free mornings, it’s a big-batch favorite the whole family will love.

Ingredients

  • 1 loaf French bread, Texas toast, challah, or brioche, sliced or cubed
  • 8 large eggs
  • 2 cups whole milk (or 2%)
  • 1 cup half and half
  • 1/2 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • For the Topping:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp corn syrup (optional)

Instructions

  1. Grease a 9×13-inch baking dish and arrange sliced or cubed bread evenly in the dish.
  2. In a large bowl, whisk together eggs, milk, half and half, granulated sugar, vanilla, cinnamon, and nutmeg.
  3. Pour the custard evenly over the bread, pressing gently to ensure it’s all soaked.
  4. Cover with foil and refrigerate overnight or for at least 6 hours.
  5. In the morning, mix butter, brown sugar, cinnamon, and corn syrup until crumbly. Sprinkle over the casserole.
  6. Bake uncovered at 350°F (175°C) for 45 minutes until golden and set in the center.
  7. Let rest a few minutes before serving with syrup, powdered sugar, or berries.

  • Use sturdy bread like challah or brioche for best texture.
  • Refrigerate at least 6 hours, overnight is best.
