Easy Marry Me Chicken is a creamy, flavorful dish featuring seared chicken breasts in a rich garlic and sun-dried tomato cream sauce. It’s an elegant one-pan recipe perfect for both special occasions and weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (in oil), chopped
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits.
  5. Reduce heat to medium-low and stir in heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  6. Let the sauce simmer for a few minutes until slightly thickened.
  7. Return chicken to the skillet, spoon sauce over the top, and simmer for 5–7 more minutes until fully cooked.
  8. Garnish with fresh basil or parsley before serving.

Notes

  • Use chicken thighs for extra tenderness if desired.
  • Serve over pasta, rice, or mashed potatoes to soak up the sauce.
  • Add spinach or mushrooms to the sauce for more vegetables.
  • Swap heavy cream with half-and-half for a lighter version.
