Ingredients

  • 3 cups cooked chicken breast or thighs, shredded or cubed
  • 3 cups broccoli florets (fresh or frozen, lightly steamed)
  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix cream cheese, mayonnaise, garlic powder, onion powder, salt, and pepper until smooth.
  3. Fold in cooked chicken, steamed broccoli, and 1 cup shredded cheddar until coated.
  4. Transfer mixture to the baking dish and spread evenly.
  5. Sprinkle remaining cheddar cheese on top.
  6. Bake uncovered for 20–25 minutes, until bubbly and golden.
  7. Let cool slightly before serving.

Notes

  • Swap broccoli for cauliflower or green beans.
  • Pepper jack cheese adds heat; mushrooms add savory depth.
  • Works well with rotisserie chicken for a shortcut.
  • Can be made dairy-free with alternative cream cheese, mayo, and cheese.
  • Freezes well—thaw in the fridge before reheating.
