Ingredients

  • Crust:
  • 1 cup cold butter, cubed
  • ½ cup brown sugar
  • 2 cups all-purpose flour
  • 1 egg
  • 1 tbsp lemon juice
  • Filling:
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • 2 tbsp lemon zest
  • ½ cup freshly squeezed lemon juice
  • ¼ cup all-purpose flour
  • Topping (optional):
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, mix flour and brown sugar. Cut in cold butter until mixture resembles coarse crumbs. Add egg and lemon juice, mixing until combined.
  3. Press the crust mixture firmly into the prepared pan. Bake for 20 minutes until lightly golden.
  4. Meanwhile, whisk together eggs, sugar, lemon zest, lemon juice, and flour until smooth.
  5. Pour filling over the hot crust. Return to oven and bake for 25 minutes, or until the center is set.
  6. Cool completely in the pan. Once cooled, dust with powdered sugar and slice into bars or squares.
