Easy High Protein Soup with Chicken and Veggies is a nourishing, one-pot meal packed with lean chicken, fresh vegetables, and savory broth. It’s quick to make, full of clean ingredients, and perfect for meal prep or a cozy weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini or 1 bell pepper, chopped
  • 2 cups baby spinach or chopped kale
  • 6 cups chicken broth or stock
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs (thyme, oregano, or Italian seasoning)
  • Optional: 1 tablespoon lemon juice
  • Optional: fresh parsley or red pepper flakes for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–7 minutes until softened.
  2. Add chicken, broth, dried herbs, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until chicken is cooked through.
  3. Remove chicken from the pot, shred with two forks, and return it to the soup.
  4. Stir in zucchini or bell peppers and cook for another 5 minutes until just tender.
  5. Add spinach or kale and simmer for 2–3 minutes, just until wilted.
  6. Finish with lemon juice and garnish with parsley or red pepper flakes if desired. Serve hot.
