Ingredients

  • 12 oz pasta (spaghetti, penne, or short pasta)
  • 4 cups fresh broccoli florets
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: 1/4 tsp red pepper flakes, lemon juice for brightness

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions.
  2. A few minutes before pasta is done, add broccoli florets to the pot.
  3. While pasta cooks, heat olive oil in a large skillet over medium heat. Sauté garlic until fragrant, about 1 minute.
  4. Drain pasta and broccoli, reserving 1/2 cup pasta water.
  5. Add pasta and broccoli to the skillet with garlic oil. Toss to coat, adding pasta water as needed.
  6. Season with salt, pepper, and optional red pepper flakes. Stir in Parmesan cheese.
  7. Serve immediately, with extra cheese and lemon juice if desired.

Notes

  • Add cooked chicken or shrimp for extra protein.
  • Swap half the pasta for zucchini noodles for a lighter dish.
  • Stir in pesto for an herby flavor boost.
  • Sun-dried tomatoes or toasted pine nuts make great add-ins.
  • For a creamier texture, add cream, half-and-half, or cream cheese.
