Easy Garlic Butter Beef Cheeseburger Rollups are a handheld twist on the classic cheeseburger, featuring juicy beef, melted cheese, and savory seasonings wrapped in golden, crispy tortillas brushed with garlicky butter. Perfect for dinner, parties, or game day, these rollups are ready in just 30 minutes.

Ingredients

  • 1 lb ground beef
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 4 large flour tortillas
  • ¼ cup butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Optional: sliced pickles for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and line or grease a baking sheet.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart, about 7–8 minutes.
  3. Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and pepper. Remove from heat and let cool slightly.
  4. In a small bowl, combine melted butter with minced garlic.
  5. Lay tortillas flat, spread beef mixture evenly, and sprinkle both cheeses on top.
  6. Roll tightly, tucking in sides, and place seam-side down on the baking sheet. Brush each roll with garlic butter.
  7. Bake for 12–15 minutes, until golden and crisp.
  8. Let cool slightly before slicing. Garnish with pickles if desired.

Notes

  • Add diced jalapeños for spice.
  • Swap cheddar and mozzarella for pepper jack or Colby Jack.
  • Use lean ground turkey for a lighter option.
  • Mini tortillas make great appetizers.
  • Store leftovers in the fridge for up to 3 days; reheat in oven or air fryer for best texture.
