A quick and flavorful fried rice made with simple ingredients, perfect for turning leftovers into a satisfying and comforting homemade meal.

Ingredients

  • 3 cups cooked and cooled rice (preferably day-old)
  • 2 eggs
  • 2 tablespoons vegetable oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup onion, chopped
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons green onions, chopped

Instructions

  1. Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
  2. Scramble the eggs until cooked, then remove and set aside.
  3. Add remaining oil to the pan and sauté garlic and onion until fragrant.
  4. Add mixed vegetables and cook until tender.
  5. Stir in the cooked rice, breaking up any clumps, and cook for a few minutes.
  6. Return the scrambled eggs to the pan and mix well.
  7. Add soy sauce, salt, and black pepper, stirring to combine evenly.
  8. Add chopped green onions and toss everything together.
  9. Serve hot.

  • Add chicken, shrimp, or tofu for extra protein.
  • Use brown rice for a healthier variation.
