This Easy French Onion Soup is a rich, comforting classic made with caramelized onions, savory broth, and a crusty, cheesy topping. Simple yet elegant, it’s perfect for chilly nights, dinner parties, or a cozy meal at home.

Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 6 cups beef or vegetable broth
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 1 1/2 cups grated Gruyère cheese (or Swiss/mozzarella)

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onions and cook, stirring often, for 30–40 minutes until deep golden brown.
  2. Stir in garlic and cook for 1 minute. Add white wine (if using) and simmer until mostly evaporated, scraping up browned bits.
  3. Add broth, thyme, bay leaf, salt, and pepper. Simmer for 20–30 minutes. Remove bay leaf before serving.
  4. While the soup simmers, toast baguette slices until crisp and golden.
  5. Ladle soup into oven-safe bowls, top with a toast slice and shredded cheese. Broil for 2–3 minutes until cheese is melted and bubbly.
  6. Carefully remove bowls from oven. Let cool slightly and serve hot.
