Easy & delicious za’atar chicken is a simple yet bold dish made with juicy chicken marinated in olive oil, lemon, garlic, and za’atar spice blend. Packed with Middle Eastern flavor, it’s quick to prepare and perfect for any night of the week.

Ingredients

  • 1.5 lbs chicken breasts or thighs (bone-in or boneless)
  • 2 tbsp olive oil
  • 2 tbsp za’atar spice blend
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp plain yogurt (optional, for extra tenderness)

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, za’atar, salt, and pepper. Add yogurt if using.
  2. Add chicken to the bowl and coat thoroughly with the marinade. Cover and marinate for at least 30 minutes or overnight in the fridge.
  3. Preheat oven to 400°F (200°C) or heat a skillet over medium-high heat.
  4. Cook chicken until golden and fully cooked—about 25–30 minutes in the oven or 6–8 minutes per side on the stovetop.
  5. Let chicken rest for a few minutes before slicing or serving. Serve with rice, salad, or flatbread.

  • Marinate longer (overnight) for deeper flavor.
  • Use boneless thighs for juicier, quicker-cooking chicken.
  • Try air frying at 375°F (190°C) for 15–20 minutes, flipping halfway.
  • Add chili flakes or cayenne for a spicier version.
