These easy decorated macarons are the perfect elegant dessert for any special occasion. With crisp, delicate shells, chewy centers, and a smooth, customizable filling, they’re a delightful treat that lets your creativity shine.

Ingredients

  • Almond flour
  • Powdered sugar
  • Egg whites (room temperature)
  • Granulated sugar
  • Gel food coloring (optional)
  • Filling of choice (buttercream, ganache, jam, etc.)

Instructions

  1. Sift almond flour and powdered sugar together to remove clumps.
  2. In a separate bowl, whip egg whites until foamy, then slowly add granulated sugar. Continue whipping until stiff peaks form.
  3. Gently fold the dry mixture into the meringue until the batter flows like lava. Avoid overmixing.
  4. Divide batter for multiple colors and add gel food coloring if desired.
  5. Pipe uniform circles onto a lined baking sheet and tap to release air bubbles.
  6. Let sit for 30–60 minutes until a skin forms on top.
  7. Bake at 300°F (150°C) for 15–18 minutes, rotating halfway through.
  8. Allow shells to cool completely before pairing similar sizes.
  9. Pipe your chosen filling onto one shell and sandwich with another.
  10. Decorate with edible markers, sprinkles, paint splatter, or melted chocolate.

Notes

  • Allow macarons to rest before baking to prevent cracking and achieve perfect “feet.”
  • Store in an airtight container in the fridge for up to 5 days, or freeze for up to a month.
  • Let macarons mature overnight in the fridge for improved texture.
  • Avoid overly wet fillings to maintain shell crispness.
