Ingredients

  • Salad:
  • 4 cups green cabbage, finely shredded
  • 2 cups red cabbage, finely shredded
  • 1 large carrot, julienned or grated
  • ½ red bell pepper, thinly sliced
  • 3 green onions, chopped
  • ¼ cup chopped fresh parsley (optional)
  • ¼ cup sunflower seeds or pumpkin seeds
  • Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar (or white wine vinegar)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine green cabbage, red cabbage, carrot, bell pepper, green onions, and parsley.
  2. In a separate bowl, whisk together olive oil, vinegar, Dijon mustard, honey or maple syrup, salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss thoroughly until evenly coated.
  4. Sprinkle with sunflower or pumpkin seeds just before serving for added crunch.
