Easy crispy Parmesan roasted red potatoes are golden and crunchy on the outside, tender on the inside, and coated with a savory cheesy crust. Perfect as a side dish or snack.

Ingredients

  • 1.5 lbs red potatoes, halved or quartered
  • 2 tbsp olive oil
  • 1/3 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika (optional)
  • 1 tsp dried parsley or Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.
  2. Wash and cut the red potatoes into halves or quarters, depending on size, and pat dry.
  3. In a large bowl, toss potatoes with olive oil, Parmesan, garlic powder, onion powder, paprika (if using), dried herbs, salt, and pepper until well coated.
  4. Spread the potatoes out in a single layer, cut-side down, on the prepared baking sheet.
  5. Roast for 30–35 minutes, or until golden brown and crispy on the edges.
  6. Let cool for a few minutes before serving, and garnish with fresh parsley if desired.

Notes

  • Add crushed red pepper flakes for heat.
  • Swap Parmesan for Asiago or Pecorino Romano.
  • Add fresh rosemary or thyme for extra flavor.
  • Mix in breadcrumbs for added crunch.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in oven or air fryer at 375°F for best texture.
