Ingredients

  • 1 lb boneless skinless chicken breasts
  • 12 oz smoked sausage, sliced
  • 1 cup long grain white rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons butter
  • 2 green onions, sliced (optional)

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced smoked sausage and cook for a few minutes until lightly browned and fragrant.
  3. Add the diced onion and cook until softened.
  4. Stir in the minced garlic and cook for about 1 minute until aromatic.
  5. Place the chicken breasts into the pot and pour in the chicken broth.
  6. Bring to a gentle boil, then reduce heat and simmer for about 15 minutes until the chicken is fully cooked.
  7. Remove the chicken from the pot and shred it using two forks.
  8. Return the shredded chicken to the pot.
  9. Stir in the rice, salt, pepper, and paprika.
  10. Cover and simmer on low heat for 18–20 minutes until the rice is tender and most of the liquid is absorbed.
  11. Stir well and garnish with sliced green onions before serving if desired.

Notes

  • Use long grain white rice for the best texture and even cooking.
  • If the mixture becomes too thick, add a small splash of chicken broth while cooking.
  • For extra spice, add a pinch of cayenne pepper or a dash of hot sauce.
  • Rotisserie or leftover chicken can be used to save time.
