Comforting and flavorful easy cheesy ground beef enchiladas made with seasoned beef, soft tortillas, rich enchilada sauce, and melted cheese for a hearty homemade meal.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce, divided
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 8 flour tortillas
  • 2 cups shredded cheddar or Mexican-blend cheese
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add ground beef and cook until browned.
  4. Stir in onion and cook until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Season with cumin, chili powder, salt, and black pepper.
  7. Stir in 1/2 cup enchilada sauce and simmer for 3–5 minutes.
  8. Spread a thin layer of enchilada sauce in a baking dish.
  9. Fill tortillas with beef mixture and a little cheese, roll up, and place seam-side down.
  10. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  11. Bake for 25 minutes until cheese is melted and bubbly.
  12. Let rest briefly and garnish with cilantro before serving.

Notes

  • Add black beans or corn for extra texture.
  • Use ground turkey for a lighter option.
  • Warm tortillas before filling to prevent cracking.
  • Cover loosely when reheating to prevent drying.
