Ingredients

  • 2 cups Cucumbers (English or Persian), thinly sliced
  • 1 cup Imitation crab meat or real crab, shredded or chopped
  • 1 Avocado, diced
  • 1/2 cup Cooked rice (optional)
  • 2 Green onions, sliced
  • 2 tbsp Rice vinegar
  • 1 tbsp Soy sauce or tamari
  • 1 tsp Sesame oil
  • 1 tbsp Mayonnaise (optional)
  • 1 tsp Sesame seeds
  • Salt and pepper, to taste
  • Optional: Nori strips, sriracha, or wasabi for garnish

Instructions

  1. Thinly slice the cucumbers and dice the avocado.
  2. Shred or chop the crab meat and slice the green onions.
  3. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and mayonnaise (if using) to make the dressing.
  4. In a large bowl, combine cucumbers, crab, avocado, green onions, and cooked rice if using.
  5. Pour the dressing over the salad and toss gently to coat all ingredients.
  6. Sprinkle with sesame seeds and season with salt and pepper to taste.
  7. Add nori strips, sriracha, or wasabi just before serving if desired.

Notes

  • Use cooked shrimp or tofu as an alternative to crab.
  • Add shredded carrots or radishes for extra crunch.
  • Toss avocado with lemon or lime juice to prevent browning.
  • Keep dressing and avocado separate if prepping ahead.
  • This salad is best served cold and enjoyed fresh.
