Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (plus more for tomato mixture)
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning (optional)
  • 2 cups cherry or Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1/2 cup shredded mozzarella or Parmesan cheese (optional)
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning (if using).
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side, or until golden and cooked through. Remove from heat.
  3. In a bowl, combine diced tomatoes, garlic, basil, a drizzle of olive oil, and balsamic vinegar. Let sit to marinate while chicken cooks.
  4. Optional: Top chicken with cheese and place under broiler until melted.
  5. Spoon bruschetta mixture over cooked chicken and drizzle with balsamic glaze, if using.
  6. Garnish with more fresh basil and serve immediately.
