This easy apple galette recipe is the perfect rustic dessert with all the flavor of classic apple pie but none of the fuss. With a buttery, flaky crust and a warmly spiced apple filling, it’s a cozy, crowd-pleasing treat finished with salted caramel and ice cream.

Ingredients

  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 35 tbsp ice water
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp lemon juice
  • 34 medium apples (a mix of sweet and tart), peeled and sliced
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)
  • Salted caramel sauce, for drizzling (optional)

Instructions

  1. Mix flour, granulated sugar, and salt in a bowl.
  2. Cut in cold butter until pea-sized crumbs form.
  3. Add ice water gradually until dough comes together.
  4. Shape dough into a disc, wrap, and chill for at least 1 hour.
  5. In a separate bowl, toss sliced apples with brown sugar, cinnamon, nutmeg, and lemon juice.
  6. Roll out the chilled dough on a floured surface into a rough circle and transfer to a parchment-lined baking sheet.
  7. Arrange the apple filling in the center, leaving a 2–3 inch border.
  8. Fold the edges over the apples, pleating as needed.
  9. Brush crust with beaten egg and sprinkle with coarse sugar.
  10. Chill the assembled galette for 20 minutes while preheating oven to 400°F (204°C).
  11. Bake for 35–40 minutes until crust is golden and apples are bubbling.
  12. Let cool slightly, then drizzle with salted caramel and serve warm with vanilla ice cream.

Notes

  • Dough can be made ahead and refrigerated for up to 3 days or frozen for longer storage.
  • Store leftovers wrapped in foil or in an airtight container in the refrigerator for up to 4 days. Reheat in the oven to keep the crust crisp.
