The Easiest Ever Beef Burritos are quick, hearty wraps filled with seasoned ground beef, cheese, and customizable fillings. Ideal for busy nights or meal prep, these burritos are flavorful, satisfying, and freezer-friendly.

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste or 1/4 cup salsa
  • 1/2 cup cooked rice (optional)
  • 1/2 cup black beans or refried beans (optional)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 68 large flour tortillas
  • Optional toppings: sour cream, guacamole, jalapeños, shredded lettuce, diced tomatoes, hot sauce

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onion until soft, then add garlic and cook until fragrant.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Stir in taco seasoning, tomato paste (or salsa), and a splash of water. Simmer for 2–3 minutes.
  4. Warm tortillas slightly to make them pliable.
  5. Assemble burritos: place beef, cheese, rice, beans, and desired toppings on each tortilla.
  6. Fold in sides and roll up tightly from the bottom. Place seam-side down.
  7. Optional: Toast each burrito in a dry skillet over medium heat until golden and crisp, about 1–2 minutes per side.

Notes

  • Add bell peppers or corn for extra texture.
  • Use chipotle or jalapeños for a spicy kick.
  • Make a breakfast version with eggs and potatoes.
  • Swap beef for ground turkey, chicken, or meatless crumbles.
  • Bake topped with enchilada sauce and cheese for a smothered version.
  • Cool beef mixture before assembling to prevent sogginess.
  • Wrap and refrigerate for up to 4 days or freeze for up to 3 months.
