Dump-and-Bake Chicken Tzatziki Rice is a one-pan Mediterranean-inspired meal that combines juicy chicken, fluffy rice, creamy tzatziki, and warm spices—all baked together for a comforting, flavor-packed dish with minimal effort.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup uncooked long-grain white rice
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 3/4 cups chicken broth
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (divided)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh dill or parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a 9×13-inch baking dish, combine uncooked rice, minced garlic, oregano, salt, pepper, 1 tbsp lemon juice, and chicken broth. Stir to mix.
  3. Nestle the chicken pieces on top of the rice mixture. Drizzle with olive oil and the remaining 1 tbsp lemon juice.
  4. Spoon tzatziki sauce over each chicken piece and spread slightly to coat.
  5. Scatter cherry tomatoes around the chicken if using.
  6. Cover tightly with foil and bake for 40–45 minutes, until chicken is cooked through and rice is tender.
  7. Remove foil and bake uncovered for another 5–10 minutes to lightly brown the top.
  8. Sprinkle with crumbled feta and fresh herbs before serving.
