Doritos Casserole with Chicken

A cheesy, crunchy Doritos Casserole with Chicken made with seasoned shredded chicken, creamy sauce, melty cheese, and crushed Doritos for a bold, comforting Tex-Mex–style bake.

Ingredients

  • 3 cups cooked shredded chicken
  • 4 cups Nacho Cheese Doritos, crushed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 2 cups shredded cheddar cheese
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup onion, finely chopped
  • 1 tablespoon olive oil or butter
  • Chopped green onions or cilantro (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil or butter in a skillet over medium heat and sauté the chopped onion until soft.
  3. In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, diced tomatoes with green chilies, sautéed onion, taco seasoning, and half of the shredded cheese.
  4. Spread half of the crushed Doritos evenly in the bottom of the prepared baking dish.
  5. Pour the chicken mixture over the Doritos and spread evenly.
  6. Top with remaining crushed Doritos and the rest of the shredded cheese.
  7. Bake uncovered for 25–30 minutes, until bubbly and the cheese is melted.
  8. Remove from the oven, garnish with green onions or cilantro if desired, and serve warm.

Notes

  • Add fresh crushed Doritos on top before serving for extra crunch.
  • Drain tomatoes well to avoid excess moisture.
  • Great for feeding a crowd or meal prep.
