2 large sweet potatoes, peeled and cubed
2 tablespoons olive oil
2 boneless, skinless chicken breasts
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

1/4 teaspoon black pepper
2 cups cooked rice or quinoa
1 cup cherry tomatoes, halved
1 avocado, sliced
1/4 cup red onion, thinly sliced
1/4 cup feta cheese, crumbled (optional)
2 tablespoons fresh parsley or cilantro, chopped
For the sauce:
1/2 cup plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt to taste

Instructions
Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, turning halfway, until tender and lightly caramelized.
Season chicken breasts with paprika, garlic powder, onion powder, salt, and black pepper.
Heat a skillet over medium heat with a drizzle of olive oil. Cook chicken for 6–7 minutes per side until fully cooked. Let rest, then slice.
In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic powder, salt, and black pepper to make the sauce.
Divide cooked rice or quinoa among four bowls.
Top with roasted sweet potatoes, sliced chicken, cherry tomatoes, avocado, red onion, and feta if using.
Drizzle with yogurt sauce and garnish with fresh herbs before serving.
