Ingredients

  • 1¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 2 cups sugar
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water or hot coffee
  • 1 cup semi-sweet or dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth and well combined.
  4. Stir in boiling water or hot coffee slowly. Batter will be thin—this is normal.
  5. Fold in chocolate chips, if using.
  6. Divide batter evenly between pans.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cakes cool completely.
  9. Frost between layers and over the top and sides.
  10. Finish with chocolate shavings, ganache, or cocoa powder as desired.
