This crockpot kielbasa and green beans recipe combines smoky sausage, tender beans, and savory seasoning for an easy, hands-off comfort meal. Perfect for busy nights, it’s hearty, flavorful, and ready straight from your slow cooker.

Ingredients

  • 1 lb kielbasa sausage, sliced into bite-sized pieces
  • 1 lb fresh green beans, trimmed (or frozen)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth (or water + bouillon cube)
  • 2 tbsp butter or 12 tbsp olive oil
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Optional: 1–2 tsp Worcestershire sauce or 1 tsp Dijon mustard
  • Optional add-ins: diced potatoes, sweet potatoes, bell peppers, red pepper flakes, thyme, rosemary

Instructions

  1. Place sliced onions and minced garlic in the bottom of the crockpot.
  2. Layer green beans on top (fresh or frozen).
  3. Add sliced kielbasa evenly over the beans.
  4. Pour in chicken broth just to cover the base of the crockpot.
  5. Add butter or drizzle with olive oil.
  6. Season with salt, pepper, paprika, and garlic powder. Add Worcestershire sauce or Dijon if using.
  7. Cook on low for 4–6 hours or high for 2–3 hours, until beans are tender and kielbasa is heated through.
  8. Gently stir to coat everything in the savory broth before serving.

Notes

  • Add diced potatoes or sweet potatoes at the start for a heartier meal.
  • Bell peppers bring sweetness; red pepper flakes add heat.
  • Stir in cream or crème fraîche in the last 10 minutes for a creamy finish.
  • Smoked sausage, andouille, or other hearty sausages can be used instead of kielbasa.
  • If using canned green beans, add them in the last 30 minutes to prevent mushiness.
