Crockpot Garlic Butter Beef Bites with Potatoes is a savory, comforting one-pot meal made with tender beef chunks, baby potatoes, and rich garlic butter, all slow-cooked to perfection. It’s an easy, flavorful dish ideal for busy days or cozy dinners.

Ingredients

  • 2 lbs stew beef or chuck roast, cut into bite-sized chunks
  • 1.5 lbs baby potatoes, halved
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 4 cloves garlic, minced
  • 4 tbsp butter, melted
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley or thyme, chopped (for garnish)
  • Optional: ½ cup beef broth for added moisture

Instructions

  1. Season beef with salt, pepper, garlic powder, onion powder, and paprika.
  2. (Optional) Sear beef in olive oil over medium-high heat until browned on all sides.
  3. Place halved baby potatoes at the bottom of the crockpot, then layer seared beef on top.
  4. Mix melted butter with minced garlic and pour over beef and potatoes.
  5. Cover and cook on low for 6–8 hours or high for 3.5–4 hours until beef is tender and potatoes are cooked.
  6. Gently stir before serving and garnish with chopped fresh parsley or thyme.

Notes

  • Add carrots, mushrooms, or green beans for more vegetables.
  • Use chopped Yukon gold or red potatoes if baby potatoes aren’t available.
  • For extra flavor, sprinkle parmesan or add a splash of cream at the end.
  • Use dairy-free butter or just olive oil for a dairy-free version.
